Mustards and pickles

Mustard is a great accompaniment for cold meats and cheeses. In the Netherlands we cut the cheese in small cubes, put them on a cocktail stick and dip them in some delicious mustard before you put the cheese in your mouth. Gorgeous! Try to match the mustard with the cheese though, if you have a young cheese, make sure your mustard is not too strong. When you use a more mature cheese you can use a stronger flavoured mustard.

Mustard goes way back. Mustard seeds are described in Indian and Sumerian texts dating back to 3000 BC, and in the New Testament, the mustard seed is a symbol of faith. Hippocrates often prescribed mustard to his patients. Mustard is also fairly unique among spices in that it's grown in temperate regions: the American Great Plains, Hungary , and Britain .

Making mustard generally involves either grinding up mustard seeds or using dry mustard, a powder available at most grocery stores. But why would you go through the trouble of making your own mustard if there is such a wide selection available at the Smart Good Food Shop?
