Olives and tapenades
Some facts about olives
The olive tree blossoms in spring and the fruit begins to set in early summer. All olives start out green then gradually ripen through to dark. Green olives are ready to harvest late September, early October. Darker olives can be harvested from around mid November through to as late as March.
All olives are inedible straight from the tree (there are only one or two exceptions to this) so if you hear anyone saying :"I ate the olives fresh from the tree", you know they are telling a porky!
